Matt's Favorite Bread
This Soft Italian Bread bakes into a tender, slightly chewy loaf with a beautifully light interior and a thin, soft crust. The olive oil gives it a subtle richness while keeping the crumb moist, and the touch of sugar rounds out the flavor without making it sweet. It’s simple, incredibly versatile, and consistently delivers that “just right” homemade Italian bread you always come back to.

Instructions

  • First, you should gather all of the ingredients and setup your bread mixer. Make sure the paddle is installed in the pan, and the pan is installed in the bread maker. 

    Next, we'll add the ingredients into the pan in this order: 

    warm water → olive oil → sugar → salt → bread flour → dry milk (optional) → yeast on top.

  • Configure the bread maker and start baking!

    1. Select the "Basic/White" or "Italian" cycle
    2. Choose a Medium crust (or light if you prefer softer)
    3. Verify the loaf size is correct for your machine. On our maker, 750g is the ideal setting (even though the recipe is for a 500g loaf size)
    4. Hit start and watch it bake!

    The bake time should take about 3 hours and 15 minutes. 

  • You're done!

    Remove the bread from the pan and let it cool for 20-30 minutes before clicing into the bread.
